10 Boring but Fast Cop-Out Recipes I Cook Up When I Can't Think of What Else to Make:
nothing exciting, healthy, or original but maybe something will help you when you're terribly desperate

1. Standby Shredded Beef or Chicken Tacos
(Throw in crock pot: still-frozen boneless, skinless chicken breasts or whatever defrosted roast... pretty much whatever I have handy plus 1 jar of salsa, one cubed onion, and 1 small can of green chilies. Cook on low all day long, then shred with a fork)
2. Lazy Spaghetti
(one jar of storebought sauce stirred into browned ground turkey, garlic, & onions and poured over noodles)
3. Not Again Loaded Baked Potatoes
(Baked potatoes with leftover chicken plus bacon, cheese, green onions, broccoli)
4. Last Minute Build Your Own Pizzas
(my kids are fussy, so they each get their own crust to do with what they please)
5. Day Before Grocery Day Breakfast For Dinner
(for I don't know what reason, this is like a party for my crew. We pull this every 3 weeks or so...they never get tired of it)
6. Pork Chops in a Pinch
(In a baking stone, we throw in some pork chops, top them with salt, pepper, rosemary, slices of lemon from our tree, sliced onion, about a 1/4 cup of water, and then bake uncovered in the oven at 350 for about an hour-ish)
7. Everything But the Kitchen Sink Spinach Salad
(Fresh Raw Spinach, red onions, sunflower seeds, feta cheese, dried cranberries, bacon, chicken)
8. Honey, You Look So Handsome When You Barbecue Steaks
(soak some steaks in some kind of marinade then bat your eyes at your husband and bring him iced tea. what? that's a recipe!)
9. All-From-Cans Corn Chowder
(not healthy but good to keep on hand for when you forgot to make dinner. not that I've ever done that... 1 can chicken, 1 can cream of chicken soup, 1 can of evaporated milk, 1 can of creamed corn, 1/2 cup milk, stirred into a medium pot and heated)
10. Oh For Heaven's Sake Just Have a Bowl of Cereal
(Oh, come on, you've done it too)

I am ROLLING at #8. We do that at least once a week - it is SO a recipe! :)
I have just recently started doing the breakfast for dinner thing, and I don't know why I waited so long - it is such an ingenious idea.
And I've made Lazy Spaghetti more times than I care to recall.
ok...I so love this post. We do breakfast for dinner at our house quite a bit too and its always a crowd pleaser...and yes, I've pulled the just have bowl of cereal or whatever you can find AND fix yourself!
I am so copying the shredded chicken thing - I didn't know you could put frozen chicken breasts in the crocky and this is now opening up new avenues for me.
Oh, and you forgot that banana mayonnaise sandwiches can now be added to your desperation dinner.

Chicken tacos? Lurve the idea! And so many others are pure goodness and delight, as well. "Honey, you look so handsome when you BBQ steaks" around here is "Honey, you are so hot with that Pizza Pizza box!".
Our standby...well, i think you've hit on it: breakfast for dinner.
And a tortilla wraps a multitude of sins...er...foods. :)

last minute dinners? hmmm, pancakes and eggs is a big one, for sure. Frittata is another, as well as the classic, Campbell's tomato soup with grilled cheese sandwiches.
#10 I can relate to! We're a big breakfast for dinner fam and it's always a hit plus easy to make :)

Around here, we'd have to add in, "It's AWANA night tonight...go get yourself some cereal." (Of course afterwards, we often swing by In & Out for a burger to make up for our earlier rush).

I missed the 10th again...
There is nothing wrong with cereal for dinner. I could do that often but my husband seems to think he needs something substantial.
I like to make egg sandwiches (fried egg, sometimes a slice of cheese, mayo or butter on bread). Or you can fancy them up and put on a toasted bagel with bacon.
I'll eat #10 all day long. Hubs and kids aren't a fan though. :)
We do tacos. We also do grilled enchiladas, burgers or those mini tacos from Trader Joes. Oh, and gluten free costs the same as my mortgage hotdogs from Whole foods. Son loves them.
